Exp\u2019H\u00f4tel au\u00a0<strong>Parc des Expositions de Bordeaux<\/strong>.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif\">Ce concours est pilot\u00e9 par\u00a0:<\/span><\/p>\n<ul>\n<li><span style=\"font-family: arial, helvetica, sans-serif\"><strong>Eric Faget<\/strong>, Chef \u00e9cole h\u00f4teli\u00e8re de Talence et pr\u00e9sident de l\u2019ACCOT Gironde<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif\"><strong>Guillaume Buisson<\/strong> vice-pr\u00e9sident de l\u2019ACCOT Gironde.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: arial, helvetica, sans-serif\"><strong>Il est r\u00e9serv\u00e9 aux \u00e9tablissements de la Nouvelle-Aquitaine.<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif\">Chaque \u00e9tablissement a pr\u00e9sent\u00e9 un bin\u00f4me de candidats qui est compos\u00e9 de deux \u00e9l\u00e8ves de deuxi\u00e8me ann\u00e9e CAP et de leur \u00ab Coach \u00bb.<strong>\u00a0<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif\"><strong><a garni\/bon d\u2019\u00e9conomat fourni :<\/span><\/p>\n<ul>\n<li><span style=\"font-family: arial, helvetica, sans-serif\">Un plat chaud avec deux accompagnements (7 assiettes \u00e0 dresser pour le jury et une pour la pr\u00e9sentation)\u00a0: la \u00ab\u00a0Truite de Banka\u00a0\u00bb sera impos\u00e9e pour le plat avec deux garnitures libres dont une \u00e0 base l\u00e9gumes de saison et l\u2019autre de ch\u00e2taigne.<\/span><\/li>\n<li><span style=\"font-family: arial, helvetica, sans-serif\">Un dessert (7 assiettes \u00e0 dresser pour le jury et une pour la pr\u00e9sentation)\u00a0: la \u00ab\u00a0Pomme du Limousin<strong>\u00a0\u00bb<\/strong>\u00a0sera impos\u00e9e pour le dessert.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: arial, helvetica, sans-serif\">Ces recettes seront con\u00e7ues \u00e0 partir d\u2019un panier garni dit de \u00ab\u00a0TERROIR PROGRESSIF\u00a0\u00bb, cher \u00e0 notre Pr\u00e9sident du Salon\u00a0: St\u00e9phane CARRADE.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif\">Une pr\u00e9conisation du Z\u00e9ro d\u00e9chets et Additifs sera demand\u00e9e.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif\">Les jurys technique et d\u00e9gustation seront\u00a0r\u00e9unis ensuite pour d\u00e9lib\u00e9rer sous la pr\u00e9sidence du pr\u00e9sident de jury, Nicolas Frion.
