L\u2019\u00e9volution des cuisines actuelles et depuis l\u2019av\u00e8nement de la cuisine \u00ab\u00a0bien-\u00eatre\u00a0\u00bb, cuisine \u00ab\u00a0l\u00e9g\u00e8re\u00a0\u00bb, cuisine \u00ab\u00a0all\u00e9g\u00e9e\u00a0\u00bb sous l\u2019\u00e9gide de grands chefs de cuisine a conduit notre appareil de formation \u00e0 se mobiliser sur la sensibilisation aux pratiques raisonn\u00e9es d\u2019utilisation des glucides et des lipides, mais \u00e9galement sur l\u2019\u00e9volution du mat\u00e9riel, des produits alimentaires \u00e0 disposition, du dressage, de l\u2019\u00e9coute attentive des besoins des clients.<\/p>\n<p>La cuisine \u00ab\u00a0all\u00e9g\u00e9e\u00a0\u00bb porte souvent en elle une image n\u00e9gative, de l\u00e9gumes bouillis, blanc de volaille sauce au fromage blanc, mais elle a \u00e9volu\u00e9, car elle repr\u00e9sente d\u00e9sormais un cr\u00e9neau commercial non n\u00e9gligeable pour correspondre \u00e0 des aspirations soci\u00e9tales fortes (flexitarien, heathly, v\u00e9ganisme..) et propose aujourd\u2019hui des recettes pleines de vitalit\u00e9 et de saveurs, des associations audacieuses de fusion food ou bien-\u00eatre rime avec plaisir.<\/p>\n<p>Le r\u00e9f\u00e9rentiel du <strong>baccalaur\u00e9at professionnel cuisine<\/strong>, int\u00e8gre tout un volet de connaissances li\u00e9es \u00e0 ces probl\u00e9matiques. Afin de faire \u00e9voluer nos repr\u00e9sentations sur le sujet, j\u2019ai demand\u00e9 \u00e0 deux enseignants sp\u00e9cialistes de proposer une journ\u00e9e de formation. La mention compl\u00e9mentaire Art de la Cuisine All\u00e9g\u00e9e est \u00e9galement une formation compl\u00e9mentaire d&#8217;une ann\u00e9e, qui porte sur les savoirs et comp\u00e9tences sp\u00e9cifiques \u00e0 ce domaine professionnel.<\/p>\n<p><span style=\"font-size: 10pt\"><strong>J.
