Dans le cadre du Programme conjoint europ\u00e9en \u00ab One Health \u00bb, coordonn\u00e9 par l&#8217;Anses, l&#8217;agence a pilot\u00e9 un projet collaboratif europ\u00e9en sur les bact\u00e9ries productrices de toxines responsables des <strong>toxi-infections alimentaires collectives (TIAC).<\/strong><\/p>\n\n\n\n<p>Staphylococcus aureus, Bacillus cereus et Clostridium perfringens \u00e9taient au c\u0153ur <strong>du projet europ\u00e9en TOX-Detect<\/strong>. Ce choix n&#8217;\u00e9tait pas fortuit : il s&#8217;agit des bact\u00e9ries productrices de toxines les plus fr\u00e9quemment impliqu\u00e9es dans les TIAC. Selon le rapport de l&#8217;Union europ\u00e9enne sur les zoonoses One Health 2021, publi\u00e9 par l&#8217;Autorit\u00e9 europ\u00e9enne de s\u00e9curit\u00e9 des aliments (EFSA), les toxines bact\u00e9riennes constituent la deuxi\u00e8me cause de TIAC apr\u00e8s les bact\u00e9ries elles-m\u00eames (17 %). Le projet, coordonn\u00e9 par l&#8217;Anses, a d\u00e9but\u00e9 en 2018 pour une dur\u00e9e de 3 ans, financ\u00e9 par le programme One Health EJP, impliquant l&#8217;Institut Pasteur, l&#8217;Inrae, ainsi que divers partenaires de plusieurs pays europ\u00e9ens.<\/p>\n\n\n\n<p><strong>Une m\u00e9thode rapide d&#8217;identification de l&#8217;esp\u00e8ce bact\u00e9rienne<\/strong><\/p>\n\n\n\n<p>L&#8217;un des objectifs principaux du projet \u00e9tait d&#8217;am\u00e9liorer les m\u00e9thodes d&#8217;identification de ces souches bact\u00e9riennes productrices de toxines. Les scientifiques ont choisi de travailler sur la technique d&#8217;identification MALDI-TOF (Matrix Assisted Laser Desorption Ionization &#8211; Time of Flight).<\/p>\n\n\n\n<p><strong>Reconna\u00eetre les bact\u00e9ries gr\u00e2ce \u00e0 la masse de leurs prot\u00e9ines<\/strong><\/p>\n\n\n\n<p>La technique MALDI-TOF consiste \u00e0 bombarder une colonie de bact\u00e9ries avec un rayon laser. Les prot\u00e9ines \u00e0 la surface de la bact\u00e9rie se d\u00e9tachent et \u00ab volent \u00bb jusqu&#8217;\u00e0 un d\u00e9tecteur.
